some pets have ribbons/banners with letters... what do they mean/stand for?

Referring to the ribbons on the front paws, what do the letters mean? I have seen a few pets with different letters as well.

I think you mean the pets from Endangered Species Day!
Every pet is inspired by a real animal and the ribbon shows how endangered it is:

LC - Least Concern [Dog lineart]
NT - No Threat [Cat lineart]
VU - Vulnerable [Deer lineart]
EN - Endangered [Fox lineart]
CR - Critically Endangered [Snake lineart]
EW - Extinct in Wild [Horse lineart]
EX - Extinct [Dragon lineart]
