answer: Her hearing.
Cream may not be able to see, but she could hear the drop of a pin. She uses her hearing to pin point the location of other horses, humans, and animals. She even uses it to navigate. While touch is helpful in finding her way, sometimes touch doesn't help her much when she has to walk into something to realize it is there. Instead, she listens. She can hear the way the wind whistles around a fence, the cry of baby birds in a tree or the rustle of leaves on a bush. The volume and intensity of the sounds help her to better specify where something is.

Honey won't be able to see soon, and she knows that. So, working every single day, she goes around the pasture, the barn, and sometimes even the around the humans and other horses to tell what is where. Counting steps in her head, remembering the feeling of the rough fencing or the smooth wood of the barn.
