This has always been a big time favorite of Emmy's since childhood, because to her it represents the epitome of summer, as it is-or at least was- only ever able to be made during this time. She'd keep an eye on the plant all summer until the rhubarb in her backyard became big enough to harvest the stocks without killing the plant completely. When the plant was large enough, she and her mother would cut down just enough to make the delicious treat and spend the next few hours baking together. When it was completed, she and her parents would sit at the table and enjoy the baked good as a treat after dinner. Although it only ever lasted the weekend, it could only ever be made whenever the plant was big enough, which was usually about a month into summer. Although the treat was short lived, it always seemed to signify that winter was truly at an end and that they were indeed in the midst of summer.

rhubarb pie is one of my faves as well! we grow it in the garden, and this year we made a whole bunch of strawberry-rhubarb pies and hopefully soon (once the apples are ripe enough) we'll be making apple-rhubarb pie as well!

Jack's favourite treat are these Orange Cream Popsicles! Super sweet and just like the fruit, it solves his crave for these orange fruits and nice sweet icecream at the same time!

Eeeep I'll take good care of her!
My family grows it in our backyard as well. This year was the first time I tried rhubarb pie, all other years we had rhubarb cake! I've never had strawberry/apple rhubarb pie but it sounds super yummy <3 I'll have to ask my grandma if we can add that in next time we have enough to make a couple more pies.
