What You Will Need:
Jello in a range of colors (for a rainbow: cherry, orange, pineapple, melon, berry blue, grape)
2/3 cup whipping cream
2 envelopes plain gelatin
Boiling water
Sugar
1/4 tsp Almond extract


Make the bottom 2 or 3 colors of Jello according to the directions on the box. Layer in the first color (think thin!) and pop it into the fridge to firm up while you make the next layer.
To make the first batch of white gelatin (1/2 the recipe), sprinkle one envelope of gelatin over 1/3 cup of cold cream and let stand for 5 minutes.
Add 1 cup of boiling water and stir until gelatin is completely dissolved. The box says five minutes. I did two. What can I say? Five minutes is a long time to stir.
Add the almond extract and some sugar. I used 1/3-ish cup of sugar for each batch of cream gelatin. I was winging it. I didnt measure. Just taste and see if you like it.
Layer your white gelatin over the firmed up first layer and pop it back in the fridge.
Repeat, repeat, repeat.

recipe by hungry rabbit
yield: 36 mini cubes

INGREDIENTS
1 cup (4 ounces),plus 2 tablespoons cake flour
3 tablespoons malted milk powder
1-1/2 teaspoons baking powder
1/4 teaspoon fine sea salt
3 sticks (12 ounces) unsalted butter, softened
1 cup (8 ounces) condensed milk
5 large eggs, room temperature
12 large egg yolks, room temperature
1 cup (7 ounces) granulated sugar
2 teaspoons pure vanilla extract
2 teaspoons pure almond extract
Food gel coloring: red, orange, yellow, green, blue, purple

DIRECTIONS
1. Adjust oven racks to middle position and heat oven to 450 degrees. Line one 8-inch square baking pan with parchment sling (allowing a 2-inch overhang on 2 sides). Set aside.

2. Add flour, milk powder, baking powder and salt to a small bowl, whisk to combine; set aside.

3. Place butter in bowl of standing mixer fitted with paddle attachment and beat at medium-high speed until creamy, about 1 minute. Add condensed milk and continue to beat until light and fluffy, about 5 minutes. Remove butter mixture into a medium bowl with a rubber spatula as clean as possible.

4. Replace paddle attachment with whisk attachment, Place eggs and egg yolks into bowl of stand mixer and whisk on medium-high speed for 1 minute. Slowly add sugar and continue to whisk until ribbon stage, about 6 minutes.

5. Reduce speed to medium and add butter mixture in three batches, until combined. Add extracts and increase speed to medium-high and whisk until fully combined, about 2 minutes. (Mixture might look curdled). Remove bowl from mixer and whisk in flour mixture with the whisk attachment of the mixer until just combined.

6. Divide batter into 6 equal portions; add food coloring to each portion to achieve desire color. Set aside.

7. Heat the prepared cake pan in the oven for 4 minutes. Remove pan from oven and spread half of purple color batter in the pan (about 5 tablespoons). Spread batter to coat the entire pan by tilting cake pan; bake for 3-4 minutes or until slightly brown.

9. Remove pan from oven, press cake layer with the bottom of a 1/2-cup measuring cup to remove excess air. Spread half of blue batter into pan over the purple layer, spread the batter to coat the entire pan by tilting cake pan; bake for 3-4 minutes or until slightly brown.

10. Continue step 9 with green, yellow, orange and red layer, then repeat the color again to achieve a total of twelve layers.

11. Remove cake pan from oven and set on cooling rack, cool cake in pan to room temperature, about 60 minutes. Lift cake out of pan with parchment sling. Cut into cubes, approximately 1-inch.

Rainbow dessert (photo and recipe, can be your own!):

Rainbow Jelly Shooter

Suggested pan: 9" x 13" cake pan, or molds
Yield: about 45 jelly shots
Garnish: Maraschino cherries, if desired

If flexible silicon molds are used, prepare the molds with a quick spray or wipe of vegetable oil, then wipe the molds clean with a clean paper towel. This will leave a slight residue to assist in unmolding, but will not affect the taste or appearance of your jelly shots.

Red Layer
1 cup water
2 envelopes Knox gelatin
1 box 3 oz box cherry or strawberry gelatin dessert
1 cup flavored vodka (we recommend Hangar One, Buddha's Hand citrus infused vodka, but your favorite will work just fine!)

Pour water in small saucepan, sprinkle with Knox gelatin. Allow to soak for a minute or two. Heat over low heat, stirring constantly, until gelatin is dissolved, approximately 5 minutes. Remove from heat. Add the gelatin dessert mix, stir until dissolved. Stir in the vodka. Pour into pan and refrigerate until fully set, about an hour.

Yellow Layer
1 cup water
2 envelopes Knox gelatin
1 box 3 oz box lemon gelatin dessert
1 cup flavored vodka (we recommend Hangar One, Buddha's Hand citrus infused vodka, but your favorite will work just fine!)

Pour water in small saucepan, sprinkle with Knox gelatin. Allow to soak for a minute or two. Heat over low heat, stirring constantly, until gelatin is dissolved, approximately 5 minutes. Remove from heat. Add the gelatin dessert mix, stir until dissolved. Stir in the vodka. Allow mixture to cool to room temperature, then pour over the set red layer and refrigerate until fully set, about an hour.

(Note, if you are garnishing with maraschino cherries, add them immediately after the yellow layer is poured in. Cut the very bottoms off the cherries so they will stand upright.)

Blue Layer
1 cup water
2 envelopes Knox gelatin
1 box 3 oz box Berry Blue gelatin dessert
1 cup flavored vodka (we recommend Hangar One, Buddha's Hand citrus infused vodka, but your favorite will work just fine!)

Pour water in small saucepan, sprinkle with Knox gelatin. Allow to soak for a minute or two. Heat over low heat, stirring constantly, until gelatin is dissolved, approximately 5 minutes. Remove from heat. Add the gelatin dessert mix, stir until dissolved. Stir in the vodka. Allow mixture to cool to room temperature, then pour over the set red and yellow layers and refrigerate until fully set, several hours or overnight. (Its ideal to let this chill overnight so the layers can fully bond.)

To serve, cut into desired shapes or unmold.

Congrats :) I must admit it was hards to choose, but message to others - good luck next time, Im sure you all soon get kit of your own! (Rainbows - omg, how much time did it take you to write that form? All the color in url I see while quoting xD)
