Are there rules as to what kind of colors and patterns these guys can come in? Natural horse colors, natural colors borrowed from other species, fantastical colors?

They come in horse colors normally. Though there can be very rare special DBE that have unnatural colors, or themes. Such as elements. There will also be customs down the road.
