Looks like you've got a lot of great recs, but I'll throw in a few more. c:
First off, I'd have to recommend The National. They are an indie band that writes melancholy but extremely beautiful music. I'd recommend starting with their most recent album (High Violet), then moving on to Alligator and then Boxer.
Second, Daughter, another indie gem. Her voice is like velvet, her lyrics are beautiful, and her songs altogether are a masterpiece. The only downside is she has, like, ten songs to her entire discography. It is a travesty.
Thirdly, Tool. They're technically classified as "art metal", and it's no wonder as to why. Their lyrics are thought provoking and intelligent (one song in particular is written to correspond to the Fibonacci sequence). All their albums are amazing, but my favorites are Lateralus and Ænima.
And for a soundtrack just because, Moulin Rouge. The majority of the songs from the film are remixed classic love songs, and I really prefer them to the originals. Plus, the movie itself is absolutely wonderful. My personal favorite track is El Tango de Roxanne.
But if you're into straight-up instrumentals, the Inception soundtrack is lovely. Regardless of if you've seen/liked the film, after listening to Time, you can't deny Hans Zimmer knows his stuff.

I'll probably think of more later.

. You can expect a list of artists from the 40s/50s/60s from me. xD
B. J. Thomas is another one!
And Bing Crosby.

For soundtracks, I have to suggest the My Neighbor Totoro soundtrack and the Kingdom Hearts soundtracks. In my opinion, they are spectacularly composed and simply beautiful songs. :3
By the way, in the My Neighbor Totoro track, the songs with vocals are Japanese.
