I've had those same concerns as you have. I started with crickets because they're supposed to be healthier but I live in an apartment. If you do get crickets, don't just place them in the cricket box! A box shouldn't have tubes (crickets die fast and tubes make that process faster. I hated getting a different cricket tank) and I put mine in a clear tote (to clarify, the tank of crickets in a clear tote). It catches any of the ones that jump out of the original tank so they don't wander around the apartment.
But I hate crickets and switched to mealworms. They are easier to care for. I don't breed them i just buy them from the pet store. I feed them the insect food a day before gecko feeding to make sure the nutrients fully absorbed by the bugs. I keep them out near the tank and buy small mwalworms. Feeding the largest ones to my gecko first, I've only had one turn into a beetle before I finished the box.
If really concerned about it then I found it helpful to out in the fridge. I put mine in the door with a little cardboard surround it just in case they escaped. They never did but it was for my piece of mind. Ot put them in the butter holder part of the fridge.
In my experience those who breed mealworms that have beetles have a lot of different insect eaters, sell them, or grind them up for compost. That's just my experience. Kudos to all those who do breed them! My landlord would kill me if I tried that.
