Leos shouldn't be given pinkies anyway, so you don't have to worry about it. XD. For leos, I find pinkies too large to be safely eaten without the chance of choking. A pinkie wouldn't survive without a parent mouse, so if you ever did get a live one, it would be best to kill it quickly before it dehydrated or starved.
I personally have no problem with pinkies, even fuzzies(it's not nice to see animal die, but other animals have to eat. It's natural), because you generally just throw them in and they get eaten. I use to have to feed adult mice, and unlike the small mice they had to be stunned prior to feeding, or else they would bite the monitors. I didn't enjoy it at all, so it was a relief when I got them converted to pre-killed(frozen).

I'm worried that he may not be able to eat..or maybe he just eats at night, I'm not sure. My mom said that albino people have trouble with eye sight so I wasn't sure if that had anything to do with it. e_e
Get him to a vet, or at least call your vet. Albinism might mean he has more sensitive eyes, but if he was previously fine with his eyes open, and now keeps them shut, then something else is wrong with him. The most common cause is a foreign body like sand or parasites, but it could also be an eye infection, which can be caused by a foreign body. Both require a trained professional to resolve, and medication in the case of an infection. Without treatment he could end up blind, loose an eye or both, or even die.
In the meantime, do not leave live food in his enclosure if he can not see. They will start to chew on him, which will only add to his problems. If he doesn't eat them within 15 minutes, make sure you remove all of them. Use a dropper or syringe to put drops of water on the tip of his nose to see if he will lick them up. Missing water is much much more dangerous than not eating.
