Extension or "E" and Agouti or "A" ; Extension produces black pigment and Agouti creates red/chestnut. A mix of the two colors creates Bay.
Extension works as follows:
EE(Homozygous/Always passes) - Ee(Heterozygous/passes sometimes) - ee(Recessive/does not pass)
Agouti is a bit different. It has 3 types; A, At, A+ . But those don't play into effect unless the horse also has a showing Extension gene, in the case if bay. If they don't it is just chestnut. So it works the same as Extension. A mix of two types of Agouti doesn't matter either. So AAt is still chestnut.

Bay
These are the types of bay. I'm going to show it in how you would list Genetics. All bay horses have at least 1 extension gene and 1 Agouti gene. I am using heterozygous genes, so one copy of each.
So:
Ee / Aa = Regular Bay; Dark, Cherry, and Bright bay also fit here
Ee / A+a = Wild bay
Ee / Ata = Seal Brown/Bay
So those are the basic colors that's the hard part. Everything else is dilutes and extras. And those are very easy to learn.

Dilutes & Extras:
For dilutes, extras, and patterns, at least one parent has to be heterozygous for it to pass.
The dilutes are as follows:
**Cream - "Cr"
**Pearl - "prl" (only shows if it's recessive)
Champagne - "Ch"
Dun - "Dd"
Flaxen - "f" (only shows if it's recessive "ff") all horses carry flaxen, it's 50/50 weather it's "FF" or "Ff"
- All palominos are showing flaxen "ff"
Add On's/Extra Genes:
Silver - "Z"
Rabicano - "Rb"
Pangaré - "P"
Sooty - "Sty"
Roan - "Rn"
Grey - "G"

Because Cream and Pearl are on the same chromosome(locus), you cannot have a homozygous pearl with cream or vise versa.
You can however have 1 cream and 1 pearl gene or two cream or two pearl.
1 cream and 1 pearl works the same as 2 cream - creates a cremello like color
2 pearl produces a golden color that will dominate over any base, even a solid black horse with two pearl genes will look gold. - on chestnut it produces apricot.
2 cream creates a pale cream, almost white color, otherwise known as cremello or perlino

Patterns:
Patterns work like dilutes, one parent has to show the pattern for it to pass on.
The patterns are:
Tobiano - "T"
Overo - "Oo" overo cannot be homozygous, it creates a lethal white foal
Splash - "nSpl" creates a minimal splash, covering only the legs and under part of the belly.
Splash White - "SplSpl" creates a extream splash that covers at least half of the body, usually from the shoulder down.
Sabino - "nSb" creates a splatter effect on the belly, in the same areas as splash.
Max Sabino - "SbSb" this creates an almost fully white horse, save for a few points of color, usually on the rump, ears/top of the head, and/or topline
Tovero (Tobiano & Overo combined) - "Tt or TT /Oo"
**Dominant White "+W" this can only occur in the heterozygous form, basically the same as Max Sabino, but no color shows through.
A horse can have a full hidden coat under the marking, so he could be a Black Spotted Appaloosa, but he would only show white. This is as close as you can get to a true white horse. This horse could still pass his black base and his appaloosa markings to his foals however.

Appaloosa:
Appaloosa is a bit complex and harder to learn. It causes the most questions. So I'll just give you the genomes for the appaloosa patterns it's easier that way.
**note that these are what I've collected between 2 different sites, but they were mostly the same.**
Leopard complex - "Lp" - every appaloosa has the leopard complex, weather it is homozygous or heterozygous it doesn't matter. Recessive complex won't give you an appy.
So:
Lplp - Varnish "Roan" Appaloosa - roan does not need to be in the genome to be a varnish
LpLp - Frosted Appaloosa or Snowflake Appaloosa
Lplp / PATN1patn1 - Leopard Appaloosa or Near-Leopard Appaloosa
LPLP / PATN1patn1 or PATN1PATN1 - Few Spot Appaloosa
Lplp / PATN2ptrn2 - Spotted Blanket Appaloosa or Extended Blanket Appaloosa
LPLP / PTRN2ptrn2 or PTRN2PTRN2 - Snowcap Appaloosa
