Undefell - The land of monsters isn't as friendly of a place as it seems... Nice people are mean, mean people are nice.
　Outertale - Undertale. In space.
Errortale - Sans gets a god complex, goes to destroy every AU he can find... Except for Undernovela.
　Underswap - Lots of roleswapping. Usually either with family or with ships. Some exceptions, though.

Underfell is where the monsters are actually mean and try to kill you, and Flowey is your only companion.
Underswap is where certain characters are swapped with eachother, for example papyrus is lazy and likes jokes and sans is energetic and wants to be in the royal guard.
OuterTale takes place in the future, where humanity is already in space. Instead of banning the monsters in the underground, they ban them in an Asteroid belt. and everything sparkles.
I don't exactly understand ErrorTale myself, so I can't explain that one to you, sorry ^^"

Underfell: All the monsters have the philosophy "kill or be killed", and Floweys your BFF.
Outer tale: The monsters are trapped in an Asteroid Belt instead of under Ebott, and everysong and I mean EVERYSONG has bells in it. Hah but everyone's space themed aswell
Error tale: Sans and a bunch of other UT characters are from a "glitched" time line, they spend their time killing all that doesn't conform to their idea of normal, and they have an inverted color scheme. They also have rad powers.
Underswap: I don't fully understand this one but everyone's personalities are swapped and Frisk was the First Child. Asgore left and Sans is a cuddly cinnamon roll.
I appear to have been ninja'd, but the Official Anthem is...

Underfell; AU where everyone follows the Kill or Be Killed rule, Flowey is the only one against that (mostly angst depending on interpretations)
Outertale; Everyone is in space (official Blog)
Errortale; I dont know how to explain this without the images, because the creator is withholding information(Official Blog)
Underswap; Characters personalities are swapped! (Official Blog)

A few other AU's I know about:
Core!Frisk; Frisk falls into the core and is omnipresent (official blog)
ReaperTale; "ReaperTale basically revolves around the Undertale Characters as gods/goddesses"(Creator's Blog)
Und_rt_le; "Sunk so deep in his despair, he made a goal to take the world with him down to zero. Thus he became something like a virus that slowly corrupts the game from the inner most files. "(Creator's Blog)
