An AU, which is short for Alternate Universe, is when the characters or storyline of something- in this case, our fandom, is changed in some way.
Like, for example a Floweypot AU, where flowey comes to the Surface in a flowerpot with Frisk, is an AU.
We're not sure what happens on the surface, so it's not canon and thus an AU.
There are different kinds of AUs, but really anything that isn't 100% canon is an AU. Even if it's just Sans saying "your gonna have a really bad time" instead of "bad time", it's an AU.
