if you make any lineart edits you'll have to redo the lineart blur-effect, i just duplicate the lineart layer, box blur the copy at 4-ish, and set the opacity low! you'll see what i mean when you look at the layers lol

I can't think of any other pokemon editables of this fashion at all to be honest, but maybe I don't look hard enough.

I'd like to suggest Meowth! I think a cat pokemon would be fun to have. I know there is a lot of cat adopt lines so I don't expect you to pick this up.
