Not sure how fair this is so I'd like some advice, thank you c:

You pet was an extended release, meaning it's the same value as an 09 rare. They're offering 1 09 rare and SO much more, it's overpay on their side.

I believe they're overpaying but it's more than fair for the store pets. Upto you which side you'd like to keep.

i do believe the pps cocoon pup has more demand, but i would say it's close and would depend on which you prefer personally. demand really does matter, though. for example, the august pps is only worth .5 ma, but with demand it's valued at .5 non.

Is this trade fair?

Frankly I've been ignoring this trade because doing the rarity math was going to make the numbers really unrealistic on your side.
For example
2 '16 VC horses = 1 '16 C = 2 '17 C = 4 '18 C = 8 '19 C = 16 '20 C= 32 '21 C = 64 '22 C = 128 '23 C, which is just outright unfair. Nobody is going to give you 128 pets for 2 VC horses. Just ask yourself which pets you like more. Around 40-something pets for 16 is pretty honest already.
