Honestly, for the newish URs, dates don't really matter. You could still easily swap a 2016 for a 2015 one
Anyways, the peach as been going for 1-2 sorbets, so it really just depends on how you value the peach.
If you value the peach at 2 sorbets, then it's unfair to you, but if you value the peach at 1 sorbet, it's unfair to them.

I can't say anything about the holly but this trade loops like overpay since like you said bee equals 2 nons and coontail equals 2 nons. Demand is userbased so it really is up to you whether you think they go for more or less.p, the coon and bee go for fair trades sometimes overpay since they do have good demand as far as I see, so id say this is a pretty good offer!

Rarity wise this is completely fair c: a tier 1 list pet is worth 3-4 09 rares, they're offering 3 (valuing vr as 2 09's).
Demand wise I can't say~
