fair, demand and rarity wise? Would it be a mistake for me to accept?

i don't think demand really has a huge effect on this trade, i'm pretty sure they could get more with the pickle

Honestly, no. Fruits are too hard to trade off. You could get better trades for each of the pets, I think.

I have so many different opinions. I need help. Can I have someone very experienced answer this for me? Could I get more with the pickle or my pets??

Unfair to you, there are only an '09 rare plus an '09 uncommon needed when you offered the Red-fronted Holly.
