I am pretty sure this trade is now unfair to me? But I'm not 100% sure what needs to be removed/added.

I wouldn't accept. You're overpaying too much, and its very unfair. The bunny is worth 2 2017 uncommons, and the dog is worth 2 2017 commons.

Would offering the 3 '16 UCs be enough for the both with slight overpay (or would that make it underpay)?

looks fair to me, the ur peach is valued at 1-2 sorbets and the ur flower pot goes for a sorbet with demand. the add ons make the trade even better ^^

but if the peach is 2 sorbs and the flower is one.. the advent rat dosen't add up to a sorb.
could i get another opinnion?

flowerpot has horrible demand and takes forever to trade off. the flowerpot usually goes for underpay so i honestly wouldnt take it. (i've owned the flowerpot before and it was a pain to trade off, even then i didnt get a fair trade for it i just traded down)

unfair to the gwj by one ur apple, the peach usually goes for 2 sorbs.
you might want to get another opinion demand wise as i'm not entirely sure.
