I'm sorry I don't know the worth of the items, but for all three trades the other side is overpaying. For the last trade they're only slightly overpaying though, so it's your preference (you might like quantity more, for example). The first trade, even without the items, they are WAY overpaying !

Okay. I was told one 2011 rare would be fair for that trade. Is that true?

And what would I need to add to the other 2 to make them fair?

I feel like they are both unfair. The 2008 VR is worth 4 09' rares. I'm not sure about the value of the storepet from the first but if it's 1 09 the first trade is only 2 09' rares and the second trade 3 09'rares
