I wouldn't trade for that if I had a CE galaxy. It's much better to have few hard to find rares than many common ones.

They're both asking for the same eat-me and drink-me, so if I accept one the other gets cancelled :> Would the second one be fair if I removed the drink-me and eat-me?

I would say unfair to you on both..
No.1: I find the Store Pets don't really match up the to worth of the Drink/Eat me's..
No.2: I find the Advent Horse doesn't really make up for all of those, and the 2011's don't help very much.

As far as I know the drink me and eat me dogs are worth 1-3 advents, so both trades are unfair to the top and if you remove the drink me and eat me dog from the second one it would be unfair to them.
