Most people aren't willing to pay above a sorb for it (at least, I definitely never would. It's not that nice a pet nor worth much) so unless you find someone super desperate for it I doubt you'll get a non each trading them individually. Even the true date BA's rarely get higher than that and that's assuming the other side is a collector who actually would care about the dates.

Depends on how you value the pets. Assuming you value both at a non it's fair. If you value the pickle lower or fox higher it would be unfair
