it's hard to tell because the rarity of your pets is unknown, but I want to say this is unfair to you. even if all 3 of your pets turn out to be just common, it'd be just about fair, or a tad unfair. the dragon was a token pet, a pretty expensive one at that- it costed 4 tokens to get it from the event it was in, regardless, if just one of your pets turns out uncommon, it's unfair.
I wouldn't personally take it.

Quite unfair to you. The advent pets usually turn out to be common or uncommon. If they were to be common, their uncommon is only worth two commons (while you have 3 commons on your side) which would be unfair to you. If your pets all turn out to be uncommon, then it'd be even more unfair to you.

....I don't really have the heart to decline them, but I do like those pets and I know enough to realize that this is pretty unfair. Though the trade itself isn't a huge deal, could someone give me any advice on general worths of uncommons from different years? How good is an '11 pet in general, uncommon or below?

In terms of pure list, it's almost exactly a fair trade... The dark heart rat is worth around 15 mid advents on the list, the mint horse is around 2 sorbets+ a red rose dog. Those two together add up to 2 sorbets + 20 mid advents,
with the red toxic added they add up to almost 3 sorbets, only one mid advent less if you follow the gaps list so strictly.
and a non is worth 3 sorbets.

either way, if you factor in the demand of pets, it's pretty unfair to you- the pets they are offering you are all hard to trade away from what I have seen.

A single '09 rare would cover the '12 store pet, although because of dates, they should add a '10 rare an '11 rare and take out one of the '09s. They can add a '14 common or '15 uncommon for the uncommons.
