I think the rock/gravel/granite foal will crumble away as it grows, leaving an adult horse of some other color with black rockes at it's hooves. Or maybe the rocks will crumble away to reveal gemstone horses.

Didn't we have dogs in the past that grew like that though starting off as stone and becoming gems? I'd think it wouldn't be likely that they'd do the same concept again.
