There are several ways you could say "I'm a quarter Chinese", but one way you could say it would be something like 我有四分之一的華裔血統

I see that you use simplified Chinese. I use traditional Chinese (I live in Hong Kong, we mostly use traditional here), so might want to google translate that (don't worry, content stays the same, just changes how the characters look) into simplified.
It depends where you're visiting. I've never been to mainland China myself. Whilst Hong Kong is a part of China, it's under "one country two systems" as they call it, so things are a tad different here compared to there.
I totally feel you about the language thing. I think I'm around a quarter (probably even less than a quarter to be honest!) Thai, can't speak Thai to save my life!
