Does anybody have a guide on what the different color of ribbons mean for the awareness stamps? I have some things I'm passionate about but not sure what all of those stand for? For instance, I am looking for a mental health or more specifically, and OCD awareness one, but those can have different colors, so are these colors specific to different things or up for interpretation?

They're up to interpretation! I just used colors and no labels so they can mean whatever you want them to mean. I can't find the guide I used offhand but this one is pretty good. According to that green is used for OCD awareness.
