Make sure you adopt the maximum amount for all of the free pets that don't require token trade-ins! Many people (myself included) will be happy to do litter swaps with you if they have doubles of an outcome you didn't get.
If you aren't already, I'd recommend setting a timer for twenty minutes, looking for banners when it goes off, and starting it again once you find one. If you do that starting right now, you'll be able to get a surprising number of eggs before rollover (about 20, if my math is correct).
Many people will be willng to trade you tokens for C$, wishlist pets, missed event outcomes, and a number of other things. I've even seen people successfully trade art commissions for tokens. If you have any of those things at your disposal and you're willing to do so, this can be a great way to get a large amount of tokens in a short period of time.
Personally, I prefer to work on getting the token trade-in "boxes" with unknown outcomes before trading in tokens for known outcomes (the bunnies). You don't have to spend all your tokens trying to get every single outcome from these boxes; I've found success opening just a handful and doing litter swaps with people for the outcomes I'm missing. While this can be difficult to pull off with certain rarer outcomes, it's definitely possible. I save as many tokens as I need to buy all the known bunnies at the end of the event. This way, I can make sure I'm able to get every single outcome by focusing my efforts on the tricky ones earlier on and getting the known ones later.
Starting late does give you a major advantage: the archives. Every possible outcome so far in the event is already listed in the archives, meaning you can easily keep track of which pets you have and which ones you're missing, and put the pets you still need on your wishlist for easier organization. It's certainly much easier than frantically scrolling through swaps/outcomes threads right after rollover, trying to figure out how many outcomes there are and which ones you still need.
Also, (and someone correct me if I'm wrong about this) there's usually an extra day to hunt for tokens even after the last day of new releases in an event, if I'm remembering correctly. After that, there's another day or two to trade in your tokens, I think.
As for which pets to make sure you get, it's really a matter of personal preference. While there's no official rarities for any Easter pets yet, some outcomes are definitely harder to get than others, and will be harder to trade for later on, so you shouldn't trade them away if you're fortunate enough to get them (unless you have doubles, of course, in which case they can give you a major advantage in trading). A certain bunny that I spent three hours trying to get after rollover last night comes to mind...
