Why am I not getting any banner animal eggs? Are they super rare.

No, you have the same chance on getting either token or animal egg.

Which way is better?

A. Collecting/saving a bunch of eggs before turning them in for pets.

B. Turning them in as I collect them.

Depends on how you plan to do your trading.
If you trade eggs in as things get released, you will sometimes have an easier time swapping outcomes for each other, as others will still be looking for things they missed as well. Trying to complete the event collection each day might also be the more exciting option if you want to have something to do every day.

But if you wait until all releases have been put up and the hunt has ended, you can calculate properly how many eggs to spend on each prize.
It's especially useful because some things, like the bunnies, cost a particular type of token, and if you wait until all prizes are released, you can see exactly how many of which token you definitely need to be able to trade for each pet.
The multi-outcome boxes often just let you pick which tokens you want to trade in, so they're best saved for last, when you can be sure that the tokens you're spending won't be necessary to buy something else.

They're decorative items^^ Unlike the tokens you can't trade them in for prizes, they're just meant to be cute little collectibles.
