After a little while you'll have the option again, it happened to me as well.

Will the trade-in prizes switch every day?

Normally for these events the prizes do not change, usually they just add more prizes that you can trade in for. The daily free items however, usually change, some will stay the whole vent but there is normally a new prize, though sometimes a repeat every day. But from what I remember, the old prizes stay there for the duration of the event and new prizes are only added.
