What are Khimaira Friesians?
Khimaira Friesians are a "normal" friesian breed with all characteristics of a friesian and a average height from 15 to 17 hands, but even 18 hands can occur. The first born Khimaira was mistaked for a chimera horse. But a genetic test showed otherwise, there wasn't a second DNA but a complete new and unknown gen. Because this gen makes the friesian look like a chimera it was named khimaira. khimaira doesn't produce a complete new dna coat and therefor it can only lighten or darken the base coat of the horse. Till now only the paint khimaira is known that makes the khimaira coloration looks like tobiano, overo, sabino or splash. But we believe that there will be more khimaira variations out there and we still try to breed them. Appaloosas are not known till now, but we have some great friesian mixed horses with appaloosa patterns, so we are sure to deliver them to you in a short amount of time.

Prep Time 15 min.
Total Time 4hr. 35 min.
What You Need
1 cup graham crumbs
3 Tbsp. butter, melted
2 pkg. (250 g each) Philadelphia Brick Cream Cheese, softened
1/2 cup sugar
1 tsp. vanilla
2 eggs
Make It
Heat oven to 350°F.
Mix graham crumbs and butter; press evenly into 12 paper-lined muffin cups.
Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended.
Spoon mixture over crust. Bake 20 min. or until centre is almost set. Cool to room temperature.
Refrigerate 3 hours.
Top with fresh berries.

Recipe:
Rasberry Swirl Cheesecakes
Prep Time: 40 minutes - Cook Time: 30 minutes - Servings: 12
Crust
3/4 cup + 2 Tbsp graham cracker crumbs (from 7 full sheets)
1 1/2 tsp granulated sugar
3 1 /2 Tbsp salted butter , melted
Raspberry Swirl
4 oz fresh raspberries
2 Tbsp granulated sugar


Cheesecake Filling
3/4 cup granulated sugar
1 Tbsp all-purpose flour
2 (8 oz) pkgs cream cheese, softened well but not melted
1 tsp lemon zest
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream

For the crust:
Preheat oven to 325 degrees. In a mixing bowl, using a fork, stir together graham cracker crumbs and sugar, then pour in melted butter and stir until evenly moistened. Add 1 slightly heaping tablespoonful to 12 paper lined muffin cups. Press crust firmly into an even layer. Bake in preheated oven 5 minutes then remove from oven and allow to cool.

For the raspberry swirl: (Pretty sure you could use a raspberry coulis or sauce from a jar, too!)
Add raspberries and 2 Tbsp granulated sugar to a food processor and pulse until well pureed, about 30 seconds - 1 minute. Press mixture through a fine mesh strainer into a bowl (basically until there are only seeds remaining in strainer, you should get quite a bit out of it). Set aside.

For the cheesecake filling:
In a mixing bowl, whisk together granulated sugar and flour. Add cream cheese and lemon zest using an electric hand mixer, blend mixture just until smooth. Mix in eggs one at a time. Stir in vanilla and sour cream just until combined. Tap bowl forcefully against countertop, about 10 times, to release large air bubbles. Divide mixture evenly among cups over crust layer, adding about 1/3 cup to each and filling nearly full. Jiggle pan to level cheesecake filling then dollop about 5 small circle of raspberry sauce over each cupcake, about 3/4 tsp total over each one. Using a toothpick, swirl raspberry filling with cheesecake mixture to create a marbled design. Bake in preheated oven 22 - 25 minutes until cupcakes are puffed and nearly set (they might crack a little but they will deflate while cooling and you won't even see it). Remove from oven and allow to cool completely, then chill in refrigerator 3 hours, until set. Store in refrigerator in an airtight container.

Picture: Rudolph!!! Complete with red nose and a few fawn spots! ^.^ A pretty chestnut or bay with the lighter belly and neck as some sort of splash marking.

For the crust:
1 package (14.3 oz) Oreos
½ cup (8 tablespoons) unsalted butter, melted

For the cheesecake filling:

4 ounces white chocolate
1 ¼ cups heavy whipping cream
½ cup powdered sugar
16 ounces (2 pkgs) cream cheese (must be full fat)
½ cup granulated sugar
2 teaspoon pure vanilla extract
20 Oreos, crushed
For the topping:

1 cup heavy whipping cream
½ cup powdered sugar
Additional Oreos for garnish
Hot fudge sauce for garnish (optional)

For the crust:
➊Prepare a 9-inch springform pan by lightly greasing the edges of the pan with cooking spray, and then wiping gently with a paper towel. Line the bottom of the pan with parchment paper.
➋Grind the cookies into a fine crumb using a food processor blender.
➌In a small bowl, melt the butter in the microwave for 30 to 45 seconds. Pour the melted butter over the cookie crumbs and stir until the crumbs are well coated.
➍Pour the crumbs into your springform pan and press firmly into the bottom and up on the sides to create a thick crust. Refrigerate the crust while you are preparing the filling.

For the filling:
➊ In a microwave-safe bowl, microwave the white chocolate chips at 50% power in 30-second increments, stirring each time until the chocolate is melted. Stir until completely smooth.
➋Place the mixing bowl and whisk attachment in the freezer for 5 to 10 minutes to chill.
➌Prepare the whipped cream. Pour 1 ¼ cups heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until the cream starts to thicken.
➍Slowly add the powdered sugar and continue beating on high speed until stiff peaks form. Set the whipped cream aside.
➎Beat the softened cream cheese until it’s completely smooth. Scrape down the sides of the bowl as needed.
➏Next add the granulated sugar and vanilla extract and continue beating until smooth.
➐Next add the melted chocolate, beating until it’s completely mixed into the cream cheese.
➑Finally, slowly fold in the whipped cream in two batches until it’s completely smooth. Then stir in the crushed Oreos.
➒Pour the filling into the prepared crust, spreading evenly. Refrigerate for 3-4 hours minimum.
For the topping:
➊Prepare another batch of whipped cream by placing your bowl in the freezer for 5-10 minutes. To prepare the whipped cream, pour the heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until the cream starts to thicken.
➋Slowly add the powdered sugar and continue beating on high speed until stiff peaks form.
➌Pipe the borders of the pie with whipped cream using a large open round tip.
➍Garnish with more crushed Oreos and hot fudge.
This cheesecake must stay refrigerated.
