ooooh i have so many. i think it either has to be sara farrel's acoustic cover of it ain't me or bastille's acoustic version of happier. or aha's unplugged version of take on me. all three are really pretty and capture the artist's voice so well. the instruments aren't overpowering and you can really hear their skill and emotion when they sing.

i really like ajr! they're the first/only band i have seen/will see live in concert. they have a lot of songs i like but the one i'm listening to the most lately is inertia from their most recent album
