None of them change gender as far as I know. It has been confirmed Toy Bonnie is a male, and the Mangle's gender is "contested"*, so it can be either.

* It is contested because Phone Guy calls the Mangle "he" but the Mangle is also included in "Ladies Night" preset.

yes, unfortuantly Scott doesn't reveal much about anything, even genders. Some of them are obvious such as old freddy but others aren't, like old chica.
