Predicting the effects of our chosen variable
There is absolutely going to be a relationship between the concentration and activity of the Pectinase: if I use Pectinase of a higher concentration, then the pectin will be broken down faster and the Pectinase, therefore, will be more active. This is because Pectinase enzymes use a lock-and-key system to break the chain-like pectin molecules into smaller, simpler ones. When Pectinase has a higher concentration, it will basically have more of the enzyme in it, and this means there is more Pectinase to be breaking down pectin at any one time. Therefore, more pectin will be broken down in a given time (our incubation time) and so the pectin mixture will flow more easily through the syringe (breaking down the pectin makes it less thick and gummy). So when we use Pectinase that is more concentrated, the mixture will take less time to flow through the syringe.
