Picadillo
1. In a mixing bowl, combine 1 lb of ground beef, 1 tsp of oregano, 1 tsp of cumin, and salt and pepper to taste.
2. In a frying pan, heat olive oil for sautéing. Sauté 1 medium white onion (chopped fine), 1 small green pepper (chopped), and 1 cloves garlic until soft.
3. Add the ground beef mixture, 1/2 cup of beef stock, and 3/4 a cup of tomato sauce. Cover and cook over medium-low heat for 15 minutes.
4. Add 2 small potatoes (peeled and diced). Cover and cook another 15 minutes, or until the potatoes are done.
5. Remove the cover. Add 8 to 10 green olive (pitted) and cook uncovered 15 minutes or until the liquid is fully evaporated, but the meat is still moist.
6. Serve warm with rice or let cool and use as a filling for empanadas and papas rellenas.
