Answer; Roiben had a hard time picking because so many mobs have merits: cows produce milk which is used to make cake, foxes are mischievous friends, wolves and dogs help save you from evil mobs, and sometimes the spiders have little jockeys like racehorses!
But ultimately, he has to say... pigs! Pigs are loyal friends who have been around since early days, and were the first friendly/passive mob in the game. Long before horses were added, they could be ridden and were loyal steeds for the early explorers of Minecraft. Not to mention, an error creating pigs created the most iconic hostile mob in the game: the creeper.
Roiben is very careful to keep his pigs safe and protected, building them large barns and fenced paddocks, where he places watch dogs specifically to keep them safe. Each pig also gets a unique name. He's currently at 255 pigs and counting! He has other barns dedicated to other animals on his farm, but by far, the one for pigs is the largest, and the most elaborate.

Vins favorite mob would hands down, have to be the dolphin.
They're just too cute to not be his favorite! Plus he just loves dolphins in general so from them to be in minecraft was a dream come true.

There are several reasons why he likes this mob, like how they actually jump out of the water, and hunt fish. But one of his most favorite things about them would have to be the fact that he just loves how he can get a whole pod to follow him, when swimming in the ocean.
I mean who wouldn't love dozens of dolphins following them!
After all it's nice to know you'll have a friend when swimming into the depths of the sea.

Fav Minecraft mod would have to be the pufferfish, they think it's hilarious how they puff up whenever approached. They look so strange when small with their little bodies and large eyes then they go *poof* and swell up to a big square. Polaris just thinks thats really cute and funny.

Answer; Shulker! Aether knows that Shulker aren't the most liked mobs, but he thinks they're really cool! They're purple, cute, the Shulker boxes can store items, and the best part of all.. if hit you float up into the air! Aether always makes sure to carry a water bucket so he doesn't lose fall damage when he drops back down, but he LOVES being able to 'fly' around without an elytra. He keeps a bunch of them in his minecraft house, and even names them all too!

bats! rady is embarrassed to admit this, but they're scared of the monsters and has to play on peaceful mode. the bats don't do anything, really.. but they're a nice surprise while you're mining in the caves. nice to know that something in there isn't after you. silverfish come in second just because of how different they are from everything else (and they jiggle)

Answer; Piglins! Aaron loves the nether! Especially after the nether update, and he loves building
his bases there amongst the piglins. He is so comfortable in the
nether in fact, that he keeps accidentally using beds!
