I was just wondering how often the store is updated with new pets/items? I was hoping it was a monthly changeover, like the adoptions, but sadly, it doesn't look to be so

Twice a month for the pets, and new items are added at random times. Items are also taken away at random times, but usually they give you a warning.

Actually, we get new Store pets every other month, not twice a month.

The store horses were released on the 1st of July, roughly 2 months they are released for, but the time varies.

That is not true. The time doesn't vary. It is every two months exactly, just like normal adoptables don't vary.
