The unknown rarity tag is on all pets that are actively available for adoption. The rarity of pets updates as part of every mid-month update, which is usually the 15th of a month! So this month's pets will have their rarity released on the 15th of next month.

Oh, I would also like to point out that actively growing pets show the tag "unknown (still growing)" until they've reached their final stage.
