Yes, you can use whatever rules you and the other user agree to - gift wars are not official, so there are no official rules. Though, typically, you do not remove or swap out pets, only continue to add until someone cannot or is unwilling to out do the other user. Then, usually, the trade will be accepted as is, with both users getting what's there.
