Hey, I'm working on something similar. Well, not really. It's a little side story of mine about a bit of an anti-hero, and well, he goes a bit mad; at least myself, him and all the other characters think he's mad. He used to be a very carefully planned character with everything he did having some sort of plan or meaning behind it, and he was also usually calm, but since 'going mad' he's a lot more spontaneous and temperamental. I'm really just writing it off the pants with no plan now, so if an idea comes to me I just write him doing it. It makes an interesting contrast, to see how I wrote him in the beginning and how I write him now. That's just been my experience with it, I don't think every 'madness' is the same. I did some research on psychology and various disorders before I started and I would suggest you do the same. It gave me a lot of ideas and also helped me realize my character's motivations and why he might act certain ways.
And also, you might consider having something traumatic happen to the character, that might make them start to go mad. I think that's an effective way to sort of make the leap from sane to insane. It doesn't even have to traumatic, just something meaningful to the character that has an effect on them.
