Gluten free baking recipes?

Hey there everyone!
So one of my friends had me and a few other friends over at her cottage for the weekend, and I want to thank her and her family for it! She is type 1 diabetic, and can only eat gluten free foods, and is very careful about what she, but I'd love to bake her and her family something. Does anyone know any good gluten-free cupcake, brownie, cookie, etc recipes? I know I could find stuff on the internet but I'd like to see which one's you've all tried and really enjoyed! Thank you so much <3

Hi 56743ffl, I would love to offer you some recipes, as I am gluten-free myself.
If you are wanting to bake something completely from scratch, you could use rice flour instead of wheat flour. But just make sure it works for what you are baking. There are lots of boxed mixes you can find at the grocery store. And as you said, you could always look online. I haven't made a lot of things from scratch yet, but here is a website that you can checkout.

try pinterest! and omg you are so nice <3 i would also make sure whatever you're baking is wheat free too because most people who are gluten-intolerant also can't have wheat (yea some things can have wheat without having gluten like oats it's weird)

what kinda desserts does your friend like? these look pretty good:
flourless smores cookies
white chocolate, blueberry, and raspberry muffins

or maybe rice krispy treats?

Oh, those look really good, especially those cookies! I don't know exactly what she likes, but I know she likes cookies, nuts, and fruits, so those are both really good! If you do know any others I'd be glad to see them! Thanks again :D

Ingredients:
250g Butter, At room temperature
250g Caster Sugar
250g Gluten-Free Self-Rasing Flour
4 Eggs
1 tbsp Vanilla Extract
3 tbsp Cocoa Powder
For the Icing:
200g Icing sugar
200g Butter, At room temperature

Method:

1.Preheat the oven to 190C(Gas 5/375F). Line the cupcake tin with cupcake cases.
2.Place the butter and sugar into a bowl, Whisk until pale and fluffy.
3.Add the eggs one at a time, Add a little flour after each one. When combined add the vanilla and the cocoa powder, stir until combined.
4.Divide up into the cupcake cases, Bake for 20 minutes until golden and risen.
5.When cool make the icing, place the butter and the icing sugar into a bowl, mix together with the back of a spoon until soft and light.
6.Place the icing into a piping bag and decorate the cupcakes.
