Correct me if I'm wrong, but:
In order to know how many fossils have yet to be found, we have to know how many fossils there are to find in total, and in order to find out how many there are to find in total, we have to find all of them first. Which is a bit of a paradox, so essentially wouldn't we never know the percentage of fossils we've found and have yet to find?
