For me, it really depends on why I am selling them. If I don't care what happens to them, I'll wait until they're adults and stick them on the AH for slightly lower than fodder price and they sell quickly. For most of my breeding pairs, I've bred them multiple times and know how much their kids will sell for. I have one pair who's kids sell for 90kT+, but I have another pair who's kids won't sell for anything above fodder price. A lot of it has to do with just messing around and seeing what they sell for best.

At this point, I think I breed dragons just to see what will happen. Some pairings I breed for lore purposes, but mostly I just want to see the possible outcomes. I only breed one dragon pair specifically for profit, and that's only because I know their kiddos will sell. I also have a pair that I breed for the purpose of spreading lineage.
Other than those specific things, most of the time I just want to see what their kids will look like.

I give almost all my hatchlings away these days. If I want them to have good homes, that's the only way to do it.
