How do you get gems?! I only have seven and I hear that people are spending hundreds on things...? Do you only get gems by buying them?

You can post on the forums hoping for a user to trade you some (Sometimes it takes a while) ex. 100kt for trade 1g=1050t
You can alternatively sell stuff on the AH for gems, dragons, apparel, familiars, etc. Or sometimes from exalting a dragon you can get 1-3 gems. (Kinda uncommon though) but yeah, you usually have to buy gems.

You can get gems by buying them with real life money or treasure yes, but there are many other ways! I get mos of mine from selling Baldwin things on the AU during festivals or from selling apparel that I don't want for gems, but I've also gotten a lot from getting gilded chests from my familiars. (It takes a couple months but its worth it.) People who are lucky and talented can get quite a bit from art and selling expensive dragons, but I just sell fodder dragons because it easier and more reliable.

!! also selling chests/eggs/festival currency are great ways to get gems. i get pretty much all my gems from festivals.
