Welcome to the Club dedicated to Guild Wars 2 where we eat, breath and sleep Guild Wars 2!
First off, let's go over some things:
What is Guild Wars 2? Guild Wars 2 is an MMO! Simple enough, right?
What races are available? Well, this is going to take a few, so hold tight!

Once the dominant species of Tyria, the humans have not fared well in the last few years. Their kingdoms, once spanning the entire continent, lie in ruins, leaving only Kryta. As the previous threats waned, an even more deadly one, that of the Elder Dragons, has threatened the very existence of the human race.
The humans are very religious race for the most part; during character creation, you have to pick what god blessed you at birth even!

Most humans are very dedicated to the worship of their pantheon, the Six Human Gods: Balthazar, Dwayna, Grenth, Kormir, Lyssa, and Melandru. Each god is a patron of several broad areas of concern including war, healing, death, truth, beauty and nature (respectively). These gods are credited with bringing the humans to Tyria and had historically taken a large part in the development of the human race, often using their powers to guide and intervene in events. However, in the past 200 years the Six Gods have stepped back and while they still answer the prayers of their followers, they are much more distant than before, letting humanity stand on its own feet.

The norn are a race of nine-foot tall Nordic-like warriors that currently inhabit parts of Kryta and the abandoned dwarven fortresses in the Shiverpeak Mountains. The individualistic norn live for the hunt, so their tracking, stealth and killing skills make them invaluable allies in any combat situation. The largest gathering of norn one can expect to find outside trading posts is in hunting parties that have united to combat a powerful foe.
The Norn are like the humans, but they worth animals more or less. They worship/pray to the totems of certain animal spirits.
Guild Wars 2 Wiki wrote:
The norn have a shamanistic religion where they revere totem animals of the Spirits of the Wild, the spirits of the strongest, bravest, wisest, or most cunning animals of the Shiverpeaks. The Great Spirit is Bear, who is seen as the strongest of all the spirits and is said to have granted the norn with the ability to 'become the bear'. The worship of the spirits Snow Leopard, Raven and Wolf is also prevalent because of the assistance they gave the norn in the past on their exodus south. There are many other totem spirits among the norn, such as Ox, Eagle, and Wurm, but they are not as widely revered.

The charr are a race of large, savage, feline creatures that occupy much of eastern Tyria. They have renounced all gods as false and instead view all of life, from magic to combat, with a hard, cynical eye. Their culture has developed into a military state where they are raised as warriors from birth.
The Charr are a very rough race without much religion. They instead of legions for the you pick from; blood, ash, and iron!
Guild Wars 2 Wiki wrote:
Due to their history many charr shun religion. They do not accept any god's authority and quickly anger on topics of charr worship or manipulation by god-like beings. Charr acknowledge other races' gods as beings of power but do not see them as something worthy of worship. In the case of the Human Gods, the charr view the deities as beings to fight and strive to kill.
The charr are a military culture and their society, technology and relationships are very much focused on supporting war. Society is built around military units which charr become a part of from childhood. Non-military tasks, such as farming and trade, can be left to the young, retired, and injured. But no matter a charr's vocation they are always viewed as a soldier and view life like a soldier. Weakness and foolishness from individuals is viewed with particular contempt, some of such acts can result in a charr becoming a gladium, or in a worse case, the charr's name being struck from the race's history.

The sylvari are a young, inquisitive race of botanical humanoids. The first Sylvari spawned from the Pale Tree in Arbor Bay emerging in 1302 AE. The tree was planted by Ronan and raised by Ventari, who were attempting to escape the violence that engulfed Tyria. At least one other sylvari tree is known to exist outside of the Grove; it exists somewhere to the west at the bank of a river.
The Slyvari are a young race and they don't believe in gods and instead show great respect to the Pale Tree, who they see as more of a parent then a god.
Guild Wars 2 wrote:The sylvari have an agnostic view of the Human Gods, wishing to see proof of the gods' existence and work.[4] They venerate the Ventari Tablet as their most sacred artifact and testament. The Pale Tree is also much revered, though more as a wise parent than as a deity. If the sylvari need counseling, they often travel to the heart of the mighty tree and commune with her there.

The asura are a race of diminutive artisans who secretly dwelt below-ground for thousands of years until the minions of the Great Destroyer forced them out of their underground homes 250 years ago. Since then, they have adapted to surface life and quickly established themselves as one of the most powerful races in Tyria.
The Asura are short, smart little guys. They believe in the Eternal Alchemy!
Guild Wars 2 Wiki wrote:
Asura believe in the Eternal Alchemy - the idea that all beings and magic in the world are a part or function of a greater purpose or "machine". Asuran life is built around the research of the Eternal Alchemy - the asura join one of three massive colleges dedicated to this research. It is believed once complete mastery is gained over the Eternal Alchemy, mastery will be gained over all of Tyria.
The Inquest is a meta-krewe which believes that the Eternal Alchemy could be controlled and manipulated like any other machine. Members of the Inquest thrive on controlling power and knowledge, and their experiments are less ethical and more dangerous than those performed by other asura. They have no qualms about experimentation on sentient beings.
