I think that you should breed her with high gp horses and try to get uni foals.

I agree.. Uni foals can be sold for passes too, so that's an extra. You'll probably get more from her foals during her lifetime then you would by just selling her now. I have a horse who's GP is only 350 (my starter), and if i breed her with a 1900 GP horse, the babe will have around 1000 GP, so yea.. a uni with a thousand already will produce high GP babies, if you breed her with other ones with good-high GPs ^^
