You should always start with a sketch and a reference.
Sketches help you flesh out ideas before you start working on a final product, it also helps you correct anatomy since you can tranform your sketch.
#2
Finding a good reference.
You can literally go to google, search "borzoi," go to images, which helps you get the anatomy down easier. Referencing helps out a lot, and can make it look better as you can always add details you didn't know were there before.

Final product.
Your final product can end out being the fluffy thing you were drawing if you have the right sketch and reference. Don't be afraid to make it fluffy if your reference is fluffy, it adds a lot to the personality. And eyes shouldn't stare through the screen unless you're doing a profile drawing, it helps make it feel more real.
