To legitimately force your sim to age, without breaking the "rules" you can buy a birthday cake from the grocery store and get the sim you want to age to blow the candles out. I don't know if it works with elders tho xD
When it comes to legacies though, breaking or bending the rules is fine as the rules are more like guidelines anyway. The challenges are there for you to have fun. If you aren't having fun because of the sims not aging properly, then you can be guilt free when you make em swim with the fishes, so you can start having fun again
