Why did they make Shadowfax white? I mean, it dosn"t even make sense! In the book he was gray.

Good question Aragorn, good question indeed. Maybe because white is more looked as a pure color, I honestly don't know.

Technically, when it comes to horses, "grey" is white, that's just what they call it :3
