I'm late to reply on this (I hate school ;w;)

NORGE THE ITALY HEAD CANON IS MAKING ME CRY.
I refused to use that one because I have this thing for happily ever afters.

Here are some of my child-friendly head canons:

1. When Iceland gets extremely mad, one of his volcanoes erupts. He's the only country this happens with, so nobody knows why. However, after the incident in 2010 with the ash from Icelandic volcanoes stopping all air travel, people have a tendency to give into Iceland whenever he wants or needs something so he won't have more tantrums.

2. Sweden used to also have a thing for Norway. In the Viking era, before the knew about Finland, he and Denmark secretly competed for Norway's attention all the time. Sweden was really upset when Denmark won, but found Finland not long after.

3. (linked to #2) Norway and Denmark didn't really like Finland that much when they met him. He was really weak and pathetic and they were Vikings at the time, so they were skeptic of his usefulness. However, since both of them knew that Sweden was heartbroken over Norway, neither was morally able to make him get rid of Finland. They grew to like Finland's company (especially after the Winter War when he became a badass xD)

I love that Iceland one XD. I've heard of the headcanon that nations disappear after a while if they can't survive as a region... Makes me worry about Prussia, since now East Germany doesn't really exist anymore o3o.
