I've had a trade like this accepted, and one cancelled. I guess it's down to personal preference but is something like this fair?

the shima LT goes for anywhere from a few '09 rares to 2 mid advents. your side equals about 1 mid advent, so it is certainly fair. i suppose it comes down to how much they are looking to get for it.

Is it fair? I think it is, I’ve looked at different threads that say any sorbet other than pink = pink balloon dog. So is it a fair swap?

yes, it is a fair swap. really comes down to which pet you'd prefer to have.
