Would this be fair? I know that the Phoenix is worth between 1.5-2 nons, but I've seen it valued more towards the 2 nons end of the spectrum. Do the rest of the pets fill up the gap? Thank you in advance!

Yep!
According to the "What is this pet worth?" all sorbets (except for pink) go for .5 nons, and .5 nons are worth roughly between 5-6 MAs.
I personally tend to value a sorbet (except for pink) at the higher end of the scale at 6 MAs, however, it's up to you!

If you're curious, I've seen the majority of pink sorbets go for .75 nons, or roughly 8-9 MAs. Again, this is just what I've seen from quickly perusing the "What is this pet worth?" thread and the "Successful VR and OMGSR Trades" thread.
