list wise they are overpaying since the zebra is higher on the list than your cat.
demand wise its unfair to you: zebras have a bad demand and usually go for around 1 non only + since their ice cat turned omgsr some people value it around 1 nons worth, but from what i heard its hard to trade off too.
your cat has a good demand and goes for 2 - 2,5 nons, i wouldnt take it, but of course its up to you how you value your pets and which pets you prefer ♥

the aussie doesnt thave the best demand and usually goes for 1 non only, the liontail is worth 2nons+, in my opinion they would need to add to make it fair.

Thoughts? How much does the dragon tend to go for? (I’m aware it doesn’t have a set value but how much can it go for that you’ve seen)

It's been going for 1.5 nons recently as I've seen, though it's demand hasn't been great. I'm fairly certain red toxics go for just under a sorb, so this is unfair to them slightly.

The Blue Dragon tends to go for 1-1.5 Nons, and I personally only value it at 1 Non because it changed rarities the same time your Non did, so it's safe to assume that just your Non would be fair for it. I personally believe the Red Toxic on your side is unnecessary. But it's really up to you, and how you personally value each side!
