both trades are unfair to you.
for the first trade - it only adds up to 2-3 nons + a sorbet, the ur bwolf only goes for 1-2 nons.
for the second trade - it only adds up to 1-2 nons + 2.5 sorbets, the zebra only goes for 1-2 nons.
the sunjewel is worth 5 nons.

Any help please? I had looked up their true dates already, the horse is october 2010 and the rat is may 2009. Are they overpaying a bit much or is it pretty fair? I've always been bad when it comes to trades like these :,D Thanks for your time!

Yup, that's overpay. Your side adds up to a 2010 (store pet) rare + 2015 rare + 2015/'14 uncommon. I'd definitely take it

I agree, the dino doesn't really have that high demand. I got it with a fair trade on my second try of trying to get it.

Rarity wise, not fair. They'd have to offer a 2010 rare to make it somewhat fair (2014 store = late 2009; 2015 store = early 2010). Demand wise, I think so..? I'm terrible with demand so maybe get a second opinion?
